Preparation

  • Add the shredded carrots, grated apple, raisins, shredded coconut, and chopped nuts, then gently stir to coat in flour.
  • In another bowl, whisk the eggs, oil, orange juice, and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients and fold together gently until no dry flour remains.

Baking
