Preparation

  • In a medium saucepan, combine the granulated sugar, butter, and milk. Cook over medium heat, stirring constantly, until the mixture comes to a boil, about 1-2 minutes.
  • Once boiling, continue to cook until the mixture reaches the soft ball stage (about 235-240°F or 113-115°C).
  • Carefully remove from heat and stir in the creamy peanut butter, vanilla extract, and salt until smooth.
  • Gently fold in the chopped pecans and shredded coconut until combined.
  • Drop spoonfuls of the mixture onto a parchment-lined baking sheet or wax paper.

Cooling

  • Allow cookies to cool and set at room temperature for at least 30 minutes to an hour.
