Instructions
 

Preparation

  • In a bowl, combine sliced strawberries, granulated sugar, and lemon juice. Allow to macerate for about 15 minutes.
  • In another bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, and continue to beat until well combined.
  • Whip the heavy whipping cream until it reaches stiff peaks, then gently fold it into the cream cheese mixture.
  • Pulse graham crackers in a food processor until fine crumbs. Add melted butter and pulse until mixture resembles wet sand.

Layering

  • In a 9x13-inch baking dish, spread a layer of the graham cracker mixture across the bottom, pressing it down to form a crust.
  • Spread half of the cheesecake filling over the crust, followed by a layer of sliced strawberries.
  • Repeat the layers: graham cracker mixture, remaining cheesecake filling, and a final layer of strawberry slices.

Chilling

  • Garnish with fresh mint leaves and additional sliced strawberries. Refrigerate for at least 4 hours or overnight for best results.
  • Slice and serve chilled.

Notes

Make sure cream cheese is at room temperature for smooth blending. Avoid over-whipping cream. Do not skip refrigeration time.
