Instructions
 

Cooking the Beef

  • Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil.
  • Once hot, add the thinly sliced beef and cook for about 3-4 minutes, stirring occasionally until browned and cooked through.
  • Remove the beef from the skillet and set aside.

Sautéing Vegetables

  • In the same skillet, add the remaining tablespoon of vegetable oil along with the sesame oil.
  • Toss in the finely chopped onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant, about 2-3 minutes.

Cooking Eggs

  • Push the onions and garlic to one side of the pan. Pour in the beaten eggs on the empty side and scramble until fully cooked.
  • Mix the scrambled eggs in with the onions and garlic.

Combining Ingredients

  • Add the cooked rice to the skillet and stir, ensuring every grain is coated with the aromatic oils, eggs, and vegetables.
  • Reintroduce the cooked beef along with soy sauce and optional oyster sauce.
  • Incorporate the frozen peas and carrots if desired, and cook for an additional 3-4 minutes, stirring occasionally.

Final Seasoning

  • Season with salt and pepper to taste and garnish with chopped green onions before serving.

Notes

Using day-old rice is crucial for the best texture. Prep all ingredients beforehand as the dish comes together quickly. Allow the skillet to heat well for optimal frying.
