Preparation

  • Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
  • In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press firmly into the bottom of the springform pan to create an even base.
  • Bake the crust for about 10 minutes until lightly golden, then set it aside to cool.

Cheesecake Filling

  • Beat the softened cream cheese, granulated sugar, and vanilla extract in a large bowl until smooth and creamy.
  • Add the eggs, one at a time, mixing thoroughly after each addition. Fold in the sour cream.
  • Pour the mixture over the cooled crust.

Peach Topping

  • In a saucepan over medium heat, cook the sliced peaches, granulated sugar, cinnamon, nutmeg, and lemon juice until the peaches soften.
  • In another bowl, whisk together the flour, sugar, baking powder, and salt. Pour in the melted butter and milk, stirring until a smooth batter forms.

Notes

Ensure cream cheese and eggs are at room temperature. Don’t overmix. The cheesecake should be slightly jiggly in the center when taking it out of the oven.
