Cheesecake Filling

Fruit Compote Layer

Instructions
 

Preparation

  • Combine crushed graham cracker crumbs, melted butter, and sugar in a mixing bowl. Stir until resembling wet sand, then press into the bottom of a 9-inch springform pan. Chill in the refrigerator for 30 minutes.

Cream Cheese Layer

  • In a large mixing bowl, beat softened cream cheese with sugar and vanilla until smooth. Add eggs one at a time, mixing just until combined. Pour half of the mixture over the chilled crust.

Adding Fruit Compote

  • Spoon peach compote over the cream cheese layer, followed by raspberry compote. Distribute evenly, then pour remaining cream cheese mixture over the top.

Baking

  • Preheat oven to 325°F (165°C) and bake cheesecake for 45-50 minutes or until center is set but slightly jiggly. Allow to cool completely in the pan.

Chilling and Serving

  • Refrigerate cheesecake for at least 4 hours or overnight. When ready to serve, top with whipped cream, fresh berries, and mint leaves.

Notes

Use room temperature ingredients for a smoother mix. Don't overmix, and allow cheesecake to cool gradually to prevent cracking. A springform pan is recommended for easy removal.
