Preparation

  • Peel and slice 2 ripe bananas in half. In a medium mixing bowl, mash the bananas until mostly smooth, leaving some small pieces if desired.
  • Add creamy peanut butter, unsweetened almond milk, maple syrup, vanilla extract, ground cinnamon, and fine salt. Whisk until well combined and creamy.
  • Gently stir in chia seeds, ensuring even distribution without dry pockets.
  • Let the mixture stand for 15 minutes, stirring again to break up any clumps.
  • Cover and place in the refrigerator for at least 2 hours, preferably overnight, to thicken.

Serving

  • Spoon the thickened pudding into individual jars or bowls.
  • Top with sliced banana, chopped roasted peanuts, a drizzle of warmed peanut butter, and a dusting of cinnamon.

Notes

Use very ripe bananas for better sweetness and texture. Stir mixture during chilling to prevent clumping. Adjust sweetness by adding more maple syrup if desired.
