Pecan-Pie Brownie Bombs

Ingredients
  

For the Pecan Pie Filling

  • 120 g light corn syrup
  • 100 g packed light brown sugar
  • 30 g unsalted butter for melting
  • 1 large egg for richness
  • 1 tsp vanilla extract
  • 120 g chopped pecans for crunch and flavor

For the Brownie Layer

  • 115 g unsalted butter melted
  • 170 g dark or semisweet chocolate melted
  • 150 g granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract for added flavor
  • 75 g all-purpose flour
  • 30 g cocoa powder
  • 1 pinch salt to balance sweetness

For the Center and Dipping

  • 225 g softened cream cheese
  • 300 g good-quality chocolate for dipping
  • sea salt flakes or extra chopped pecans for finishing touch

Instructions
 

Make the Pecan Pie Filling

  • Melt the butter, corn syrup, and brown sugar in a small saucepan over medium heat, stirring continuously until the sugar dissolves.
  • Allow the mixture to bubble gently for 1-2 minutes.
  • Remove from heat and whisk in the egg quickly to prevent scrambling.
  • Stir in the vanilla extract and chopped pecans, then set aside to chill until firm.
  • Once firm, scoop the mixture into balls and place them in the freezer to set.

Bake the Brownies

  • Preheat the oven to 175°C / 350°F.
  • In a large bowl, melt the butter and dark chocolate together until smooth and glossy.
  • Whisk in the granulated sugar, then add the eggs one at a time followed by the vanilla extract.
  • Sift the flour, cocoa powder, and salt into the bowl, folding gently until just combined.
  • Pour the brownie batter into a prepared pan and bake for 20-25 minutes.
  • Allow the brownies to cool completely.

Make the Brownie Truffle Dough

  • Once the brownies are cool, crumble them into a bowl and mix in softened cream cheese until combined.
  • Take a spoonful of the mixture and form it around a frozen pecan filling ball to create smooth balls.
  • Chill them again until firm.

Dip in Chocolate

  • Melt the remaining chocolate for dipping in a microwave or double boiler until smooth.
  • Carefully dip each brownie bomb into the melted chocolate, gently tapping off any excess.
  • Place them on a parchment-lined tray and sprinkle with sea salt or additional chopped pecans before the chocolate hardens.

Notes

Ensure chocolate is finely chopped before melting to prevent seizing. Chill brownies and pecan filling properly for better assembly and form.
