Instructions
 

Make the Crust

  • Begin by crushing the chocolate sandwich cookies into fine crumbs using a food processor or a rolling pin.
  • Combine the cookie crumbs with melted butter until fully mixed.
  • Press this mixture firmly into the bottom of a 9-inch springform pan, forming a solid base.
  • Place the pan in the freezer for 15–20 minutes to allow the crust to set perfectly.

First Ice Cream Layer

  • Once the crust is firm, spread the softened peppermint ice cream evenly over the crust.
  • If using, sprinkle crushed peppermint candies or mini chocolate chips on now.
  • Return the pan to the freezer and freeze for 30–45 minutes or until the first layer is firm.

Second Ice Cream Layer

  • After the peppermint layer has set, spread the softened vanilla or chocolate ice cream over it.
  • Smooth the top with a spatula, cover the pan with plastic wrap, and freeze for at least 4 hours, preferably overnight.

Make Whipped Topping

  • In a cold mixing bowl, pour in the heavy whipping cream.
  • Add in the powdered sugar and vanilla extract.
  • Using an electric mixer, whip the cream until stiff peaks form.

Garnish & Serve

  • Spread or pipe the whipped cream generously over the top of the cake.

Notes

Always ensure your ice cream is slightly softened before spreading. When making the whipped cream, ensure your bowl and beaters are cold. You can use low-fat ice creams or yogurt-based options for a lighter version. Whipped coconut cream can be a dairy-free substitute.
