Preparation

  • Preheat your oven to 325°F (160°C).
  • In a bowl, mix graham cracker crumbs with melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan.
  • In a large bowl, beat softened cream cheese until smooth and creamy. Gradually add sugar and vanilla extract, mixing until incorporated.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in sour cream, raspberry puree, and pink food coloring until evenly incorporated.
  • Pour the batter over the prepared crust and smooth the top.

Baking

  • Bake for 50-60 minutes or until the center is set but still slightly jiggly.
  • Let it cool at room temperature before refrigerating for at least 4 hours or ideally overnight.

Garnishing and Serving

  • Before serving, garnish with fresh raspberries.

Notes

Make sure the cream cheese is at room temperature for easy mixing. Whip the batter gently to incorporate air, allowing a lighter cake. Allow the cheesecake to cool gradually in the oven after baking to prevent cracks.
