  • 2 medium ripe avocados The star of this dish.

Preparation

  • Start by draining the tuna well, ensuring you press out any extra liquid for a filling that isn’t watery. Flake the drained tuna into a medium mixing bowl using a fork, creating a fluffy texture.
  • Into the bowl, add the creamy mayonnaise (or tangy yogurt), diced celery, and red onion, followed by the fresh lime juice, Dijon mustard, your choice of herbs, and jalapeño if desired. Sprinkle in salt and pepper to taste.
  • Stir everything together until your mixture is creamy and well-combined.
  • Slice each avocado in half lengthwise and carefully remove the pits. Brush the cut sides lightly with lime juice to prevent browning.
  • If needed, scoop a spoonful of avocado from each half to widen the cavity. Fold the diced avocado back into the tuna filling mixture.
  • Spoon generous amounts of the creamy tuna filling into each avocado half and garnish with microgreens or extra herbs. Serve immediately with lime wedges.
