Make raspberry sauce

  • In a small saucepan, combine raspberries, sugar, and lemon juice over medium heat. Stir and mash until the berries break down, releasing their juicy goodness.
  • Mix cornstarch with water and stir it into the berries, allowing the mixture to thicken. Remove from heat and strain if desired for a smoother sauce. Be sure to let this cool completely before using.

Prepare cheesecake filling

  • In a bowl, beat the softened cream cheese, sugar, egg yolk, and vanilla extract together until smooth and creamy. Set this heavenly filling aside, allowing its flavors to meld.

Make cupcake batter

  • Preheat your oven to 350°F (175°C). Line a cupcake pan with 12 liners to hold these sweet creations.
  • In a bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, beat the softened butter and granulated sugar together until they turn fluffy and light.

Make frosting

  • In a clean mixing bowl, beat softened butter and cream cheese together until creamy and smooth.
  • Gradually add in the powdered sugar and vanilla extract, beating until fluffy and light. This luscious frosting will beautifully complement the cupcakes!

Finish and serve
