For the Cheesecake Filling

For the Raspberry Sauce

Make Raspberry Sauce

  • In a small saucepan, combine raspberries, sugar, and lemon juice over medium heat. Stir and mash until the berries break down. Mix the cornstarch with water and stir into the mixture. Cook until thickened and remove from heat. Allow to cool.

Prepare Cheesecake Filling

  • In a bowl, beat softened cream cheese, 1/4 cup granulated sugar, egg yolk, and 1/2 tsp vanilla extract until smooth. Set aside.

Make Cupcake Batter

  • Preheat your oven to 350°F (175°C) and line a cupcake pan with 12 liners. In one bowl, whisk together flour, baking powder, and salt. In another bowl, beat the softened butter and 3/4 cup sugar until fluffy. Add eggs one at a time, followed by sour cream, milk, and vanilla extract. Gradually add dry ingredients until just combined.

Assemble Cupcakes

  • Spoon a tablespoon of batter into each lined cupcake well. Add 1 teaspoon cheesecake filling and cover with more batter until 2/3 full. Top with 1/2 teaspoon raspberry sauce and swirl slightly.

Bake

  • Place the cupcake pan in the preheated oven and bake for 20–22 minutes, until a toothpick comes out clean. Let cool completely.

Make Frosting

  • Beat softened butter and cream cheese together until creamy. Gradually add powdered sugar and vanilla extract until fluffy.

Finish and Serve

  • Pipe frosting onto cooled cupcakes. Drizzle with extra raspberry sauce and garnish with fresh raspberries.

Notes

Using room temperature ingredients for better mixing is crucial. Pre-made raspberry sauce can be stored in the refrigerator. Avoid overmixing batter for fluffiness.
