Filling Ingredients

  • 1/2 cup raspberry jam Sweet and tart, providing luscious filling.
  • 1/2 cup crushed pistachios Adding a crunchy texture and rich flavor.

Instructions
 

Preparation

  • Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
  • In a bowl, sift together almond flour and powdered sugar, ensuring there are no lumps for a smooth texture.
  • In another bowl, beat egg whites until frothy, then add cream of tartar. Gradually add granulated sugar while continuing to beat until stiff peaks form, creating a glossy meringue.
  • Gently fold the almond flour mixture into the egg whites, being careful not to deflate the batter. If you desire, add green food coloring for an eye-catching hue.
  • Pipe small circles onto the prepared baking sheets and let them sit for 30-60 minutes until the tops are dry to the touch.

Baking

  • Bake for 15-20 minutes, keeping an eye on them to make sure they don’t over-bake. Once done, let them cool completely on the baking sheets.
  • Once cooled, pair macarons and spread raspberry jam on one half, then sprinkle with crushed pistachios before sandwiching the other half on top.
  • Allow to rest for a few hours before serving for the best flavor integration.

Notes

Skips the resting step can prevent the formation of the crucial foot of the macaron shell. Be careful not to over-mix the batter to maintain air. Consider alternatives for healthier options such as coconut flour.
