  • 1 cup heavy cream Whips into airy clouds; ensure it is cold for best results
  • 1/2 cup raspberry puree Use fresh raspberries when possible for vibrant flavor
  • 2 tablespoons sugar Adds sweetness to the mousse
  • 1 teaspoon vanilla extract Aromatic flavor enhancer

Base and Toppings

Instructions
 

Preparation

  • Melt the white chocolate in a double boiler, stirring gently until smooth. Allow it to cool slightly, but not harden.
  • In a separate bowl, whip the heavy cream and sugar together until soft peaks form.
  • Gently fold the cooled melted white chocolate into the whipped cream using a spatula.
  • In serving glasses or bowls, layer your choice of cookie or sponge base first, followed by a layer of raspberry puree.
  • Continue layering with the white chocolate mousse until glasses are filled.
  • Top with optional whipped cream and fresh berries.
  • Chill the parfaits in the refrigerator for at least two hours before serving.

Notes

Make sure your heavy cream is cold when whipping. To avoid chocolate seizing, melt slowly over gentle heat. For added creativity, try other fruit purees or a hint of mint.
