Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, sift together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, and vanilla extract until well combined.
  • Gradually add the wet mixture to the dry ingredients, stirring gently until everything is smoothly combined while being careful not to over-mix.
  • Pour the batter into the prepared cake pan and bake for about 25-30 minutes or until a toothpick inserted comes out clean.
  • Let the cake cool completely in the pan for about 15 minutes before transferring it to a wire rack.

Cheesecake Filling

  • Beat the softened cream cheese and powdered sugar together until silky smooth, then mix in the vanilla extract.
  • Carefully slice the cooled cake in half horizontally and spread a generous layer of cream cheese filling on top of the bottom layer.
