Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with foil or parchment, greasing it lightly.
  • In a skillet, heat olive oil over medium heat. Add the onion and cook for 4-5 minutes until softened. Add garlic and cook for another 30 seconds. Remove from heat to cool.
  • In a large bowl, mix crushed Ritz crackers, milk, eggs, Worcestershire sauce, salt, pepper, and parsley. Let sit for about 3 minutes.
  • Gently mix in the ground beef and cooled onion mixture without overworking.
  • Shape into a loaf and place on the baking sheet.

Baking

  • Bake the meatloaf for 35 minutes.
  • While baking, mix ketchup, brown sugar, Dijon mustard, and Worcestershire sauce in a bowl for the glaze.
  • After 35 minutes, brush the glaze over the meatloaf and bake for an additional 20-25 minutes until the internal temperature reaches 160°F (70°C).
  • Remove from the oven and let it rest for 10-15 minutes before slicing.

Notes

Letting ingredients come to room temperature is crucial for even mixing. Avoid overmixing the beef to keep the meatloaf tender. Allow it to rest post-baking for better moisture retention.
