Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) and line one rimmed baking sheet with parchment paper.
  • Brush each baguette slice with 1 tablespoon of the extra-virgin olive oil and sprinkle with kosher salt.
  • Position the baguette slices on the prepared baking sheet and bake for 8-10 minutes, turning halfway through until golden and crisp.

Roasting the Cherries

  • Combine the pitted and halved cherries with the remaining tablespoon of olive oil, fresh thyme, black pepper, and a pinch of salt. Toss until well coated.
  • Spread the cherries onto an additional baking sheet and roast for about 14-18 minutes, stirring once along the way.

Preparing the Cheesy Spread

  • In a small bowl, combine goat cheese, cream cheese, honey, lemon zest, and lemon juice. Beat until smooth and spreadable.
  • Taste and adjust with a tiny pinch of salt if needed.

Assembly

  • Spread each toasted baguette slice with the cheese mixture, followed by a spoonful of roasted cherries.
  • Drizzle balsamic glaze and honey over each slice, finish with torn basil leaves, additional thyme, and flaky sea salt.

Notes

For a healthier version, consider using whole-grain baguette or lower-fat cheese. You can also try using alternative sweeteners and fruits like figs or peaches.
