Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large oven-safe skillet or Dutch oven, add a small dash of oil over medium heat.
  • Add the white sausages to the skillet and cook, turning occasionally until golden brown on all sides, about 8 minutes.
  • Remove the sausages from the skillet and set aside.
  • Add the thinly sliced onions to the same skillet and cook for about 5 minutes until they start to soften and caramelize.
  • Add minced garlic and stir for 1–2 minutes until fragrant.
  • Pour in the vegetable broth and stir in mustard, thyme, bay leaves, salt, and pepper. Bring to a simmer.
  • Nestle the browned sausages back into the skillet.
  • Transfer the skillet to the oven and roast for 25–30 minutes, basting the sausages halfway through.
  • Remove bay leaves before serving.

Notes

Searing the sausages enhances flavor, and caramelizing onions slowly yields sweeter results. Basting is key to keep sausages moist.
