Instructions
 

Cooking the sausages

  • Heat the olive oil in a large skillet or Dutch oven over medium heat.
  • Add the sliced smoked sausage and breakfast sausage, cooking them until browned and slightly crispy, about 4-5 minutes.
  • Remove the sausages from the pan and set aside.

Sautéing the vegetables

  • In the same pan, add the finely chopped onion, diced green bell pepper, and diced celery.
  • Sauté for about 4-5 minutes until tender and aromatic.
  • Add the minced garlic and cook for another 30 seconds.

Thickening the gumbo

  • Sprinkle the flour over the sautéed vegetables and stir constantly for 2-3 minutes to create a light roux.
  • Gradually pour in the chicken broth, stirring continuously to prevent lumps.
  • Add the fresh satsuma orange juice, Cajun seasoning, smoked paprika, salt, and black pepper to taste.
  • Return the sausages to the pan and let everything simmer for about 10-12 minutes until the mixture thickens.

Making the scrambled eggs

  • In a separate bowl, whisk together the eggs with milk, salt, and pepper.
  • Melt the butter in another skillet over low heat and gently scramble the eggs until soft and creamy.

Serving

  • Spoon the gumbo over warm, cooked white rice or serve it alongside toasted crusty bread.
  • Top each serving with soft scrambled eggs and garnish with sliced green onions.
  • Serve immediately.

Notes

Use high-quality sausage for the best flavor. Don’t rush the sautéing process for the vegetables. Adjust seasoning to your taste as Cajun flavors can vary.
