Preparation

  • Preheat your oven to 350 degrees F.
  • Lightly oil a 9x13-inch baking dish to prevent sticking.

Cooking

  • Heat olive oil in a large skillet over medium-high heat.
  • Add the ground beef and diced onion. Cook for about 8-10 minutes, breaking up the meat as it cooks, until browned.
  • If there’s excess fat, drain it before proceeding.
  • Add garlic, cabbage, kosher salt, black pepper, smoked paprika, and thyme. Cook for another 8-10 minutes until cabbage softens.
  • Stir in rice, diced tomatoes, tomato sauce, beef broth, and apple cider vinegar. Simmer for about 3 minutes.
  • Transfer mixture to the prepared baking dish, cover tightly with foil, and bake for 25 minutes.
  • Uncover and bake for an additional 10 minutes until bubbling.
  • Let the dish rest for 5-10 minutes before serving.
  • Serve the mixture in bowls topped with chopped parsley.

Notes

For variations, swap beef for lean proteins, use whole grains, or increase vegetables. This dish is gluten-free but check labels for sauces.
