For the Bok Choy

  • 4 small small bok choy, halved lengthwise These leafy greens are crisp and tender.
  • 1 tbsp toasted sesame oil Adds a rich, nutty flavor.
  • 1 tbsp soy sauce or tamari Brings umami depth.
  • 1 tbsp rice vinegar Contributes a slight tang.
  • 1 tbsp maple syrup or honey Natural sweetener for glaze.
  • 2 cloves garlic, minced Adds aromatic flavor.
  • 1 tsp fresh grated ginger Enhances with warming spice.
  • 1 tsp chili flakes Kicks up the heat.
  • 1 tbsp sesame seeds Toasted for crunch.
  • 2 stalks green onions, chopped Adds freshness.
  • fresh cilantro, for garnish Adds burst of freshness.
  • Salt & pepper to taste Essential for seasoning.

Instructions
 

Preparation

  • Preheat your oven to 425°F.
  • Slice the bok choy in half lengthwise and place them cut-side up on a baking sheet.

Glaze Preparation

  • In a bowl, mix together the toasted sesame oil, soy sauce or tamari, rice vinegar, maple syrup, minced garlic, and grated ginger.

Cooking

  • Brush the sauce generously over the halved bok choy.
  • Roast in the preheated oven for 12–15 minutes until the edges are crispy and caramelized.
  • Once done, sprinkle with chili flakes, sesame seeds, chopped green onions, and fresh cilantro before serving.

Serving Suggestions

  • Serve warm as a side dish or over rice/noodles.

Notes

Ensure to preheat the oven adequately and not overcrowd the baking sheet. Can be made in advance and stored in the fridge for up to 3 days.
