Spicy Tuna Crispy Rice

Ingredients
  

For the rice

  • 2 cups sushi rice Rinse thoroughly to remove excess starch.
  • 2.5 cups water Use to cook the sushi rice.
  • 1/4 cup rice vinegar Adds a mild tanginess.
  • 1 tablespoon sugar Brings a hint of sweetness.
  • 1 teaspoon salt Enhances the flavors.

For the spicy tuna topping

  • 8 oz sushi-grade ahi tuna Finely diced.
  • 2 tablespoons mayonnaise Preferably Japanese mayo.
  • 1-2 tablespoons sriracha Adjust to taste for spice.
  • 1 teaspoon soy sauce Adds umami depth.
  • 1 teaspoon sesame oil Infuses a nutty aroma.
  • 2 green onions finely sliced For fresh crunch.
  • 1 tablespoon sesame seeds For garnish.
  • 1 tablespoon vegetable oil For frying.
  • 1 teaspoon chili crisp Optional for extra flavor.
  • thinly sliced jalapeño For garnishing.

Instructions
 

Preparation

  • Rinse 2 cups of sushi rice under cold water until the water runs clear.
  • Combine the rinsed rice with 2 1/2 cups of water in a rice cooker or pot. Cook according to package instructions.
  • In a small bowl, mix 1/4 cup rice vinegar, 1 tablespoon sugar, and 1 teaspoon salt until sugar dissolves.
  • Once the rice is cooked and still warm, gently fold the vinegar mixture into the rice.
  • Press the seasoned rice into a parchment-lined baking dish, about 1 inch thick. Refrigerate for at least 1 hour.

Cooking

  • Cut the chilled rice into rectangles or squares.
  • Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
  • Pan-fry each rice piece for 2–3 minutes on each side until golden and crispy.

Assembly

  • In a separate bowl, combine 8 oz diced sushi-grade ahi tuna, 2 tablespoons mayonnaise, 1–2 tablespoons sriracha, 1 teaspoon soy sauce, and 1 teaspoon sesame oil. Mix gently.
  • Top each crispy rice square with the spicy tuna mixture, sprinkle sesame seeds, finely sliced green onions, and jalapeño.
  • Serve immediately while warm and crispy.

Notes

For a lighter alternative, substitute mayonnaise with Greek yogurt. You can also use brown rice instead of sushi rice. Experiment with toppings like diced avocado or crunchy vegetables.
