For the bagel filling

  • 4 plain, onion, or everything bagels Your choice of bagels provides a chewy and comforting base.
  • 1 lb thinly sliced ribeye, sirloin, or shaved beef Tender, juicy steak that will be the star of this dish.
  • 1 tablespoon Worcestershire sauce Adds a savory, umami depth to the meat.
  • 1 teaspoon garlic powder For an aromatic undertone.
  • 3/4 teaspoon kosher salt, divided A key seasoning to enhance flavor.

Preparation

  • In a mixing bowl, stir together the mayonnaise, mustard, steak sauce, lemon juice, dill, and black pepper. Place in the refrigerator to chill.
  • Toss the thinly sliced steak with Worcestershire sauce, garlic powder, half a teaspoon of salt, and black pepper. Allow to marinate briefly.

Cooking

  • In a large skillet over medium heat, melt one tablespoon of butter. Add the sliced onion and cook, stirring often, for 7-9 minutes until soft and golden brown. Set aside.
  • Increase the skillet’s heat to medium-high, add one tablespoon of butter and the seasoned steak in an even layer. Cook for 2-4 minutes, flipping once, until browned and cooked through. Transfer to the plate with onions.
  • In a separate bowl, beat the eggs with the remaining salt. Melt the final tablespoon of butter in a nonstick skillet over medium-low heat, add the eggs, and cook until just set. Fold into four squares.
  • Toast the split bagels until golden brown. Spread the chilled sauce on both sides of each bagel.
  • Layer a slice of cheese on the bottom of each bagel, followed by steak, caramelized onions, a folded egg square, and another slice of cheese. Top with the other half of the bagel. Let the fillings steam the cheese for about one minute before serving.

Use fresh, quality ingredients for optimal flavor. Don’t rush the onion cooking process; allow them to caramelize for sweetness.
