Instructions
 

Prepare the Crust

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until coated and resembles wet sand.
  • Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until set. Let cool.

Prepare the Cheesecake Filling

  • In a large mixing bowl, beat the cream cheese until smooth.
  • Gradually add the granulated sugar and mix until combined.
  • Add vanilla and mix well.
  • Add eggs one at a time, mixing just until combined.
  • Mix in sour cream and heavy cream until smooth.
  • Pour the batter over the cooled crust.

Bake the Cheesecake

  • Place the springform pan on a baking sheet. Bake for 55-65 minutes until the center is slightly jiggly.
  • Turn off the oven and let cool in the oven with the door slightly open for an hour.
  • Refrigerate for at least 4 hours or overnight to set.

Prepare the Strawberry Topping

  • In a medium saucepan, combine strawberries, sugar, and lemon juice. Cook over medium heat until juices release.
  • If using, dissolve cornstarch in water and add to the mixture. Cook until thickened.
  • Remove from heat and cool to room temperature.

Assemble and Serve

  • Carefully remove the cheesecake from the springform pan.
  • Spread or spoon the strawberry topping evenly over the cheesecake.
  • Garnish with whipped cream and fresh mint leaves if desired.

Notes

For best results, chill the cheesecake overnight to let flavors deepen.
