Preparation

  • Pat the chicken dry with paper towels and season with kosher salt and black pepper.

Cooking

  • Place the seasoned chicken into the slow cooker, layering it with the yellow onion, red bell peppers, green bell peppers, and drained pineapple chunks.
  • In a bowl, whisk together the reserved pineapple juice, soy sauce, brown sugar, minced garlic, ginger, and rice vinegar until combined.
  • Pour the sauce over the chicken and vegetables, cover, and cook on low for 4-5 hours or high for 2-3 hours.
  • Once cooked, mix the cornstarch with cold water to create a slurry and stir into the sauce, cooking on high for another 20 minutes.
  • Shred the chicken and stir it back into the thickened sauce.

Serving

  • Serve the chicken over jasmine rice, garnished with green onions and sesame seeds.

Notes
