For the Noodles and Vegetables

  • 14 oz Korean sweet potato glass noodles (dangmyeon) These noodles are naturally gluten-free.
  • 1 small onion, thinly sliced Aromatic and sweet when sautéed.
  • 1 large carrot, julienned Vibrant and crunchy, adding color and nutrition.
  • 4 cups fresh spinach Richly green, it wilts beautifully.
  • 3 pieces green onions, cut into 2-inch pieces Fresh and slightly peppery, perfect for garnishing.
  • 1 tablespoon olive oil A healthy fat that brings all the ingredients together.
  • 3 tablespoons soy sauce Enhances the overall flavor of the dish.

Instructions
 

Marinate the Beef

  • Combine the sliced beef with 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, half of the minced garlic, and a pinch of freshly ground black pepper. Stir well and allow it to marinate for at least 30 minutes.

Prepare the Noodles

  • Bring a large pot of water to a boil. Add the sweet potato noodles and cook for about 6 to 8 minutes until they become tender yet chewy.
  • Drain the noodles and rinse them under cold water to stop the cooking process and maintain their texture. Toss with a drizzle of sesame oil to prevent sticking.

Cook the Vegetables

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add thinly sliced onions, sautéing until translucent, about 3-4 minutes.
  • Add the julienned carrots and remaining garlic. Cook until carrots are slightly tender but vibrant, about 2-3 minutes. Remove vegetables from skillet.
  • In the same skillet, wilt the fresh spinach, about 1-2 minutes, then transfer to the bowl with the cooked vegetables.

Cook the Beef

  • Increase the heat to medium-high and cook the marinated beef, sautéing until browned and fully cooked through, approximately 4-5 minutes.

Combine and Serve

  • In a large bowl, combine the cooked sweet potato noodles with sautéed vegetables and beef. Add 3 tablespoons of soy sauce, 1 tablespoon of brown sugar, and 2 tablespoons of sesame oil. Toss until evenly coated.
  • Finish with a sprinkle of green onions and toasted sesame seeds. Serve warm or at room temperature.

Notes

For a lighter option, substitute beef with chicken or tofu and increase the number of vegetables. Rinse noodles thoroughly after cooking to prevent sticking.
