Preparation

  • Preheat a grill or stovetop grill pan over medium-high heat.
  • Season the filet mignon steaks generously with salt and pepper.
  • Grill the filets for about 4-5 minutes per side, or until they reach a perfect medium-rare.
  • Remove the steaks from the grill and let them rest for a few minutes.
  • Slice the tomatoes into thin rounds and set them aside.
  • Toast the rustic bread slices until golden and crispy.
  • Brush each slice of toasted bread with melted butter.
  • Layer the slices of buttered bread with the tomato slices.
  • Slice each filet mignon into thinner strips and place them on top of the tomatoes.
  • Spoon the warm béarnaise sauce generously over the steak.
  • Sprinkle grated Gruyère cheese and garnish with parsley before serving.

Notes

For a lighter option, substitute lean cuts of steak and use whole-grain or gluten-free bread. Consider a yogurt-based béarnaise sauce for reduced calories.
