Ingredients
  

For the Teriyaki Sauce

  • 1/3 cup low-sodium soy sauce Acts as the base for the sauce.
  • 3 tablespoons honey or packed brown sugar Sweetens and balances the sauce.
  • 2 tablespoons rice vinegar Adds tanginess to the sauce.
  • 2 tablespoons water Balances the consistency.
  • 1 tablespoon cornstarch Thickens the sauce.
  • 1 teaspoon toasted sesame oil Adds a nutty aroma.

For the Filling

  • 1 lb ground chicken Main protein source.
  • 3 cloves garlic, minced Infuses flavor.
  • 1 tablespoon fresh ginger, grated Adds warmth and spice.
  • 1 red bell pepper finely diced For sweetness and color.
  • 1 cup shredded carrots Adds crunch.
  • 1 can (8 oz) sliced water chestnuts, drained and chopped For crunch.
  • 3 green onions thinly sliced, divided For garnish and flavor.
  • 1/4 teaspoon black pepper Enhances flavor.

For the Wraps

  • 12 pieces butter lettuce leaves or romaine lettuce leaves, washed and dried Used for wraps.
  • 1 tablespoon sesame seeds For texture and garnish.
  • to taste Sriracha or chili garlic sauce Optional spicy kick.

Instructions
 

Prepare the Sauce

  • In a small bowl, whisk together the low-sodium soy sauce, honey, rice vinegar, water, cornstarch, and toasted sesame oil until smooth. Set aside.

Cook the Chicken

  • Heat the avocado oil in a large skillet over medium-high heat.
  • Add the ground chicken and cook for 5-6 minutes, stirring frequently until fully cooked and browned.
  • Stir in the minced garlic, grated ginger, diced bell pepper, shredded carrots, chopped water chestnuts, about two-thirds of the sliced green onions, and black pepper. Cook for 2-3 minutes until veggies are softened.

Combine and Serve

  • Whisk the sauce again and pour into the skillet over the chicken mixture. Simmer for 2-3 minutes, stirring frequently until the sauce thickens.
  • Spoon the warm chicken filling into the lettuce leaves. Top with sesame seeds, remaining green onions, and drizzle with Sriracha or chili garlic sauce if desired. Serve immediately.

Notes

To enhance flavors, consider seasoning the chicken beforehand. Use low-sodium soy sauce to control saltiness. Prepping ingredients ahead can ease the cooking process.
