  • Add lime juice, minced garlic, grated ginger, and season with salt and pepper. Stir until all are combined.
  • Introduce the chicken cubes into the marinade, ensuring each piece is well coated. Allow to marinate for at least 30 minutes or overnight in the refrigerator for best results.

Grilling

  • Thread the marinated chicken onto soaked bamboo skewers, leaving space between pieces for even grilling.
  • Grill the chicken skewers for 5-7 minutes per side until they are cooked through and have a beautiful char.

Coconut Peanut Dip

  • In a separate bowl, whisk together peanut butter, coconut milk, soy sauce, lime juice, honey, and sesame oil until well combined and velvety.

Serving

  • Once the chicken skewers are cooked, carefully remove them from the grill. Slide each piece off their skewers to serve.
  • Drizzle or scoop your coconut peanut dip on the side and garnish with chopped peanuts and fresh cilantro.

Notes

Let chicken marinate overnight for deeper flavor. Avoid overcrowding the grill and check for doneness to ensure perfect skewers.
