Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add Italian sausage, breaking it up with a wooden spoon, and cook until browned (5-7 minutes). Drain excess grease if necessary.
  • Sauté diced onion for 3-4 minutes until softened and translucent.
  • Add minced garlic and stir continuously for about 30 seconds until fragrant.
  • Add diced potatoes, chicken broth, water, Italian seasoning, crushed red pepper flakes, salt, and black pepper. Bring to a boil.
  • Once boiling, reduce heat to a gentle simmer and cook for 15-20 minutes until potatoes are fork-tender.
  • Stir in heavy cream and chopped kale, simmer for an additional 3-5 minutes.
  • Remove from heat and stir in freshly grated Parmesan cheese.
  • Serve warm, garnished with fresh parsley and extra Parmesan if desired.

Notes

Always taste and adjust the seasoning before serving. For creaminess, blend a portion of the soup before adding cream. Reheat slowly if preparing ahead to prevent curdling.
