  • 1/4 cup neutral oil For moisture and to prevent sticking.

Glaze

  • 1 cup powdered sugar Essential for a sweet glaze.
  • 1 teaspoon matcha powder, sifted For enhanced glaze flavor.
  • 2 tablespoons unsweetened plant milk, plus more as needed Adjust consistency of glaze.
  • 1/2 teaspoon vanilla extract To echo flavors from the batter.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a donut pan with neutral oil.
  • Mix plant milk and apple cider vinegar in a measuring cup and let it sit for 5 minutes.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, matcha powder, salt, and optional nutmeg.

Mixing Batter

  • Add the milk mixture, vanilla extract, and neutral oil to the dry ingredients. Stir gently until just combined.

Filling and Baking

  • Fill each donut cavity about three-quarters full with batter.
  • Bake for 10-12 minutes until tops spring back and a toothpick comes out clean.
  • Cool the donuts in the pan for 5 minutes before transferring to a wire rack to cool completely.

Glazing

  • Whisk together powdered sugar, matcha powder, plant milk, vanilla extract, and salt for the glaze until smooth.
  • Dip each cooled donut into the glaze and set on a wire rack to set.

Notes

Ensure to sift matcha powder to prevent clumps. Avoid over-mixing the batter. Cool donuts completely before glazing.
